White wine obtained from grapes of the historical “Pecorino” vines, hand-picked during the third decade of August. The grapes undergoes a cold pre-fermentative pellicular maceration or 18 hours. Subsequently it is de-stemmed and squeezed in inert atmospheres (with nitrogen) in order to preserve the aromatic substances. After alcoholic fermentation, the wine is racked and is left on its own lees for about five months in steel containers.

Tasting notes and food-wine combinations

It has a brilliant and intense yellow colour with golden reflections, typical aromas of citrus and exotic fruits, balsamic herbs and spices. Balanced taste, medium-bodied and elegant with good acidity and slightly mineral. Served at 10-12 °C, it is perfect with seafood, cheese, soups, first courses and white meat.
