This wine comes from the youngest vineyards where the authentic clone “biotipo Casauriense” is cultivate. After a wilting period on the plant (about 7-10 days), the grapes are manually picked and carried out in the cellar and undergo a pre-fermentative pellicular maceration (in contact with the peels at low temperature). The result is lightly pressed in inert atmosphere (with nitrogen) and the must is clarified by flotation. After alcoholic fermentation, the wine is racked and left on its fine lees for about five months in steel containers.

Tasting notes and food-wine combinations

A brilliant yellow color with golden reflections, floral scent of acacia and fruity scent of apple and white peach, with a herbaceous background. Balanced taste between rounded sensations of mature fruits and pleasant balsamic notes with aftertaste of almonds. Served at 10-12 °C it is perfect with all types of desserts and biscuits, compositions based on fruits and blue cheeses.
